Eickhout acts as vice chairman of the Committee on the Environment, Public Health and Food Safety and is a member of the Delegation for Relations with the People's Republic of China. He is also the alternate from the Committee on Budgetary Control, the Committee on Economic and Monetary Affairs, and the Delegation for Relations with the United States.

In addition, she is the alternate member of the Committee on Foreign Affairs and the Subcommittee on Human Rights, among others.
